Pumpkin Chocolate Chip Muffins for Dinner

So I often read about breakfast for dinner...ya know in the context of "oh my gosh I am so crazy I had pancakes for dinner." Which is great and I love eggs and pancakes for dinner just as much as the next person, however tonight I decided to take it to the next level...red wine and muffins for dinner. Sure I am running a 10k tomorrow morning and I should be carb loading aka. pasta eating, however I decided hell I do everything differently so let's try a new training technique called muffins and wine. I will let you know how that goes tomorrow around 9:50 am when I am finishing my run...I will either deem this experiment a success or an utter disaster...but I sure am enjoying it now.





It all started with me checking my emails while I was sitting under the dryer at the hair salon...it takes forever to dye light brown hair to a black color so I had plenty of time to kill. On a side note yeah I don't pretend my hair color is natural...it just isn't and it hasn't been for so long that I am really not so sure what my natural hair color actually is. I was blond for 6 years and now I am dark brown and I think my natural hair color saw the light of day was somewhere around high school graduation.

Anyway I digress back to sitting under the dryer...I got an email from www.allrecipes.com and it was for Pumpkin Chocolate Chip Muffins and damn did they sound good. So since I was going to the grocery store for the ingredients for my Red Beans and Rice, which actually was the perfect pre-race meal as it is a good combo of carbs and proteins, I decided to add the 3 ingredients I needed for the muffins to my list.

So by the time I got home and started to get hungry the thought of muffins sounded way better than Red Beans and Rice and a new idea was born. I poured my glass of Imposter red wine, turned on my new album of The Best of John Coltrane and started to bake my little heart out.

Muffins are always a fun thing to make as I tend to buy random cute muffin liners whenever I see them. And tonight I decided to use my inspirational Mary Engelbreit ones...everyone needs inspiration before a run, right?

The muffins were easy to make, made the house smell like heaven and just felt like fall. I loved the spice of the nutmeg, cinnamon and cloves with the earthy flavor of the pumpkin and the sweetness from the chocolate chips and well the sugar. They were pretty much exactly what I was craving!!

First mix the sugar, vegetable oil and eggs. Add the pumpkin and water.

In another bowl add the flour, baking soda, baking powder, cinnamon, nutmeg, salt and cloves.

Add the wet ingredients to the dry and add the chocolate chips. Word to the wise do not over stir your muffins it truly is the fastest way to get them chewy and not in a good way.

Put them in your cute muffin cups and cook them for 20-25 min in a 400 degree oven and dinner is served my friends!!!

On another side note...yes I am full of those tonight...in the past year or so I started to ask my family to tell me stories about my child hood. And since you all know quite a bit about my formative years from my blog I thought you would find this amusing. I had always thought of myself as kind of a shy kid and I thought I came out of my shell as I got older. However, the more stories and questions I ask the more I have started to realize the view of myself is just down right wrong. I was talking to a family member yesterday who told me I was pretty much the farthest thing from shy and the only time I was quiet was when I didn't like someone...I pretty much fell off my chair from laughing because that is the way I still am today. I can be described as talkative bordering on a chatter box, but if I don't like you or I don't have anything nice to say well these sweet lips of mine are sealed. The only other time I am not talking is when I am asleep.

Cheers my friends and wish me luck tomorrow as I run 6 miles on a diet of red wine and muffins...but I am damn happy right now!!
